My 4 point breakfast!

In my effort to try and stay on this program I decided to actually bust out a pan and cook today! Yup. Really. This is what I came up with and was surprised it was only 4 points:

3 egg whites
1 egg yolk
1 wedge Laughing Cow Light Queso Fresco with Chipotle

Crack one whole egg into a bowl
Crack 2 more into the whole one, only using the white
Scramble
At the end, add 1 wedge of Laughing Cow Queso Fresco with Chipotle cheese
Stir until the cheese is melted and remove immediately

Fruit Salad:
1/2 a small apple
1/2 a banana
4 grapes, halved

yeah, just cut it all up and put it in a small bowl, looks like a lot!!!

Okay, so I know the above doesn't sound like a LOT of food, but once you plate it, it really is! And the protein from the eggs should keep you full. If your like me and like something sweet after you eat, the sweetness of the fruit should suffice....hopefully ;)
